1 cup of caster sugar
1 tablespoon pure honey
1½ cup ground almonds
1½ cup ground wanuts
2 tablespoons rolled oats flour
1 teaspoon of baking powder
¼ teaspoon of ground ginger
Seeds from 8-10 cardamom pods, lightly crushed
a pinch of salt
1. Put the orange into a large saucepan of boiling water. Bring back to a boil and simmer for 50-60 minutes or until tender. Drain and set aside to cool slightly. Cut the orange into quarters, remove any seeds and place in a food processor. Blend until it is smooth.
2. Heat the oven to 350°F and grease a 9 x 9 inch cake pan and line with wax paper or parchment paper.
3. Add the eggs and sugar to a bowl and beat together. Then add the tablespoon of honey and beat again. Stir in the ground almonds and walnuts, the rolled oats flour and the spices. Add the pureed orange and stir well to combine.
4. Scrape the batter into the prepared pan. Bake for 50-60 minutes or until a little springy and deep golden brown. Let it cool in its pan and serve.
