Recipe: Ayam Masak Merah (Chicken in Spicy Tomato Sauce)


Half chicken – cut into small pieces (deep fry the chicken)
3 tbsp of dry chili paste
½ stick cinnamon
2 tbsp chili sauce
2 tbsp tomato sauce
2 tbsp of tomato paste
1 big onion cut into rings
5 tbsp of oil
1 cup of green peas

Paste For Grinding

3 cloves of garlic peel
½ ginger 2 big onions
½ inch galangal


  1. Heat up the pan with oil and saute the chili paste until slightly caramelized. Add the grind spice and fry until it’s fragrant and the paste turns a little dark in color.
  2. Add in the tomato paste, tomato sauce, chili sauce , sugar & salt to taste. Allow the sauce to simmer before adding in the chicken that was fried earlier. Add in the peas as well.
  3. Mix the sauce so the chicken are well coated . Serve hot with rice.
